"Yeast, Be Not Afraid!"

I just love that title of an article by thekitchn.com. It completely sums up my approach to yeast. Believe me, I've had my moments of, 
"Oh come on! It can't be that hard. Last time must have just been a fluke!"only to have cinnamon rolls, rolls, or bread turn out 
completely flat. Reading the phrase" let the yeast germinate" throws me into a panic! What does that even mean!?

I know what it means, but for some reason I always second guess myself when it comes to the subject of yeast and have 
created a timid and terrified approach every time it's mentioned. Well, not this time! Thanks to a friend of mine who 
found this recipe online I have gained confidence! These are the yummy looking rolls featured in my post from Easter. :)

This double quick recipe is super easy and takes hardly any time at all! Enjoy!


Double Quick Dinner Rolls
(Recipe adapted from allrecipes.com and from Marian Collins)

Makes 12 dinner rolls

Ingredients:
2 1/4 teaspoon active dry yeast
1 cup warm water (110 degrees F/45 degress C)
1/4 cup dry potato flakes
2 tablespoons white sugar
1 teaspoon salt
1 egg
2 tablespoons vegetable oil
3/4 teaspoon onion powder
2 1/4 cups all-purpose flour

To Make:

1. In a large bowl, dissolve yeast in warm water. Add potato fakes, sugar, salt, egg, vegetable oil, 
onion powder, and 1 cup of the flour. Beat until smooth. Stir in remaining flour. 
Continue stirring until smooth, scraping batter from sides of bowl. 

2. Cover and let dough rise in a warm place until doubled, about 20 to 30 minutes. 

3. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups. 

4. Punch down dough. Spoon dough into 12 greased muffin cups, filling each half full. 
Let rise until batter reaches tops of cups, or about 20 minutes. 

5. Bake for 15 minutes. Serve immediately.
